At this point in my life I have made A LOT of meals! Some awesome, some good and some just horrible. With the popularity of Pinterest, my life has become so much easier. Am I right or what?!
I have gathered together a few of my families favorites. They maybe new to your recipe box or they maybe your favs already. My hope is that you enjoy them and it helps with your planning (or lack of) for the next week.
1. Chicken Avocado Lime Soup
My husband came across this recipe. I make it during the summer and winter. I usually use essential oils for the lime juice. Of course you can always us both. Yum! I make this using Costco rotisserie chicken and while you’re there grab their avocados. (You have to give them a few days to ripen)
2.Taco Soup (My mom’s recipe)
Our family favorite! That is when the youngest is actually eating something other than peanut butter and jelly sandwiches for dinner because I make NOTHING he likes! (He will live)
I make a huge batch and freeze it so I have an easy meal ready to go!
3. Loaded Chicken and Potato Casserole
How can you go wrong Loaded Potato that has BACON! Do I really need to say more? Ok maybe cook that bacon the day before and cook it good. I find that when I have a recipe that has bacon that I make a huge ole mess and it is best to break it up into 2 times. Or you can cheat and buy bacon bits. (Yuck, sorry)
4. Chili Lime Shrimp Tacos
This recipe asks for raw shrimp. Yah raw seafood scares me so I usually go with the precooked. The seasonings may not soak in as well with precooked. So it is up to you! Either way I am going to give it a YUM!
5. Cowboy Casserole
Cowboy Casserole is not for someone who is watching their waistline but if you want to make a kiddo happy (at least in my crazy house) this is sure to make them eat their dinner and have a full tummy.
I little tip that you may not know about, if you cook with let’s say 73/27 ground beef, after you drain the grease throw the meat in a strainer and rinse it off with hot water. It gets the extra grease off. (Be careful with getting too much grease down the drain. I learned that the hard way when I was younger. Oops!)
